How to Build A Forged Knife, by Jim Saviano
Various steels, each with different composition and properties, can be used to make knives. In selecting steel for forging knives, we are looking for the following characteristics: strength, toughness, wear resistance, ability to take an edge, and edge holding. Some also seek stain resistance, which is provided by high levels of chromium, however such levels make the steel unsuitable for forging.
Each of these character-istics can be gained by adding various elements to the makeup of the steel in its production. Yet a delicate balance must be maintained, since too much or too little of any of these elements can be problematic.
